These energy bars are my favourite healthy snack to give to pregnant mothers, as well as breastfeeding mothers. They taste amazing, and are so easy to make. Most “healthy” cereal bars may contain the goodness of oats, superfoods, nuts, and seeds, but are also likely laced with quite a bit of sugar as well, or others with artificial sweeteners making them “low fat”.
These energy bars are NOT low fat. Let’s just get that out there from the start. They are loaded with calories! However they are full of good nutritious ingredients, good fats, and much needed calories to keep you going.
I once made these for a friend who was pregnant and had to lead a week long holiday club for over 100 children from the front. I made them for my sister in law when her twins were tiny and relentlessly demanding. When friends have a new baby, I tend to not add to the pile of baby clothes. Instead I bring a batch of these and listen to their birth story!
I’ve made these for all my clients so far, and I am nearly always asked for the recipe. So here it is:
140 Grams of Porridge Oats
40 Grams of Raisins
30 Grams of Goji Berries
10 Grams of flaked almonds
50 Grams of Mixed seeds (omega mix)
130 Grams of a No added Sugar Peanut Butter
180 Grams of Honey
1 tsp of Vanilla
1. Combine the Dry ingredients
2. Melt the Peanut Butter and Honey, and add the vanilla
3. Mix Together
4. Press into a greased/lined 8 inch square baking tin
5. Bake at 180C for 9-10 minutes, or until the edges look a little brown.
6. Cool Completely
7. Cut into Bars
Enjoy!! These are soooo good. They will last at least a week in a tin. I have taken them camping. They also make for a great quick breakfast when you’re pregnant and rushing out the door, or for when you at home with the baby and need something you can quickly reach for to keep you going, that isn’t laden with stuff that won’t do you any good.
